    You’ve got to see this!

    I love Christmas and this is a great twist on the traditional, more like standing traditional on its head! *guffaw* Candy Christmas is just a hoot!! In my part of the world we are still running around in shorts and I mowed a pretty green lawn today, so believe me, this kit both fits in and is refreshing with all its standout brights. So cheerful!

    Sometimes when kids cry its so pitiful its cute, KWIM? I have a great shot of my two over-tired boys from a Christmas long ago just bawling their eyes out and both are cute as two buttons!! I couldn’t find that shot because its pre-digital and those pictures are put away so good even I can’t find them! LOL! Okay I have a pretty good idea where they are now that I looked in 5 or so places! *hoot!* So I grabbed this one from everystock.com. I am letting this little guy remind me not to get overtired this holiday!~

    Key Lime Cupcakes


    1 cup all-purpose flour
    3/4 cup self-rising flour
    1 cup butter, room temperature, divided
    1 1/4 cups sugar
    2 large eggs
    2 1/2 tablespoons fresh lime juice
    2 tablespoons finely grated lime peel, divided
    1/4 teaspoon neon-green food coloring ( optional)
    3/4 cup buttermilk
    8 ounces cream cheese, room temperature
    1 1/2 cups powdered sugar
    1/2 teaspoon vanilla extract
    Preheat oven to 350F degrees. Line muffin pan with paper liners.
    Whisk flours in medium bowl. Beat 1/2 cup butter in large bowl
    until smooth. Add sugar and beat to blend. Beat in eggs one at a
    time. Add in fresh lime juice, 1 tablespoon lime peel, and food
    coloring. Beat in flour mixture in 3 additions, alternately with
    buttermilk in 2 additions. Spoon 1/3 cup batter into each liner.
    Bake cupcakes until tester inserted comes out clean, 20 to 25
    minutes. Cool 10 minutes and remove from pan to cool completely.
    Beat cream cheese, powdered sugar, 1/2 cup butter, 1 tablespoon lime peel and vanilla in medium bowl until smooth. Spread over cupcakes.

    Jodiann here:  If you want you can skip the cream cheese and butter…make a light sugar glaze with all the other frosting ingredients. Or skip it all and drop a quick dollop of Whipped Cream on each one.   I make these each year for Thanksgiving and  again at Christmas ( sugar glazed). They are a bright note to the  heavy meals and even heavier desserts we all LOVE this time of year. They wake up your mouth! LOL!
