Lyric Challenge: Beautiful Dreamer

 

First off, Please keep my friend Andrea, and fellow designer at DSO in your thoughts and prayers. Her mother died recently and she and her family are in dear need of healing. Read on…

Christmas at our house is winding down. Its was a great ride still feeling the afterglow. I am starting to take decorations down and give away the ones we didn’t use this year. I think the taking down and giving away is my favorite part this year. It so slow and comfortable. With the boxes stacked all around I can say for sure…Christmas stuff GROWS! LOL!

I see that Bunny did an retrospective of the year at her blog and I was thinking what a great idea that was, yet I am going to pass. I am not good as summing up. I would just write it all over again! Except longer! HOOT!! For those who can do it…its great!!

Looking ahead I can do. LOL! For me it starts in October. That is when I plan homeschool for the next few months and start thinking about the new year coming up. So I have a while to think it all through. Yet, its this lovely between time from Christmas to New Years pulls all those little ideas together into a plan of sorts. Making resolutions has been unpopular of late, I still make them.  I guess the reason I still like making resolutions is I only make them for 3 months and not the whole year. This helps me. I can’t really process an entire year ahead and turn it into the daily commitment to change. Its overwhelming. The idea is to help myself be happy by changing a few things not giving myself more to worry about. So I try to keep that in mind. I try some new things on for size for the next 3 months and if they work for me I keep doing them, if not I say goodbye without feeling guilty. Some things only take 3 months to change anyway so why try to keep doing them for a whole year?

These are changes that will make my life more joyful over the next 3 months. At the end of March I will check these changes and see if they are worth sticking with.

  • I resolve to drink more water. I will keep a glass, cup, jug of water within arms reach for the next 3 months.
  • I will throw out or give away all clothing that does not fit me or look good on me, including my favorite garden shoes with the holes, but not my ugly garden hats. They stay.
  • I resolve to replace some of what I get rid of a little at a time for the next 3 months with only clothing that makes me feel great!
  • I resolve to take a morning walk/run outside 3 times a week for the next 3 months. Camera optional.
  • I resolve to set study assignments for my sons during my walks so I don’t blow off a walk because I should be schooling.
  • I resolve to write only ONE sticking my nose in email a day for the next 3 months AND this one email will only include ONE piece of unsolicited advice. Period.
  • If someone asks for my opinion all bets are off! LOL! 
  • I give myself permission to pontificate liberally on this blog! HOOT!

Lyric Challenge January : Beautiful Dreamer

I love this song, and chances are everyone has heard it. Its pretty famous in music boxes. Only recently did I know it has lyrics. My husband was whistling something similar the other week and it got me thinking about something lively I had heard in a western movie saloon scene and that got me thinking about Silverado my hands down favorite movie. And that lead to my remembering Stephen Foster, the composer.  I knew only a little about him So I looked him up. This was his most famous song. I have such a soft spot for the quiet artist type, Emerson, e.e. cummings, Poe, and Stephen Foster fits right in with them.

Almost There~

Its the Day Before The Day Before Christmas! Christmas Eve, Eve-Day! BWAH!! I am so excited to be entering into the hand clapping excitement of “almost Christmas” WEEEEEEEEE!

If you are not clapping your hands with glee, more like stomping your feet in frustration. I have been there sisters and brothers! I can testify to the sad sack Christmas, the rip your hair our Christmas and the I give up Christmas!   Check out Flylady and start smiling!

We did some cooking and baking yesterday and possibly more today. It was a calm day for the most part. A last minute trip to the grocery had us playing bumper cars for a bit, but the bell ringers were out and even though we could have worn shorts it was a beautiful pre-Christmas Day.

At home, Nathan and I made Chex Mix, Cheese Dip, Cheese Balls, Veggie Pate’ and Amish Pudding yesterday afternoon. Okay, I did the last two on my own because Nathan lost interest in it along the way, but that was cool. I needed a little alone time with my mixer. Baby I missed you! LOL!

I would like to make  blueberry pie-lettes, and mix some cookie doughs, bake some and sock some away to cook tomorrow. But if it doesn’t happen or only some gets done…I am okay with it.  I put off this baking thing to work with the DSO team more closely leading up to Christmas and I don’t regret it. I would if I rushed to make things happen ( like cookies) at the last minute. So I am not rushing! HOOT!

It was a wonderful day yesterday, warm,  so we opened the doors and windows to vent the heat we were making in the kitchen. Georgie, our guinea hen came in the door a bit to stand on the entry tile and get out of the wind. It WAS blowy out. The southies were blowing up a little moisture from the Gulf of Mexico and it felt good! Poor Georgie-Girl she tumbled over a few times in the yard that I saw! LOL! That got her feathers all out of place and she looked perfectly indignant about it! I set her up with a lawn chair just outside the door so she didn’t have to move every time a dog went in and out. I got a lot accomplished not having to keep letting them in and out. What a great idea it was to leave the doors open. Birds singing, wind blowing. It was yummy! I think I will do that again today.

I thought this recipe up when the kids were first learning to help me in the kitchen hadn’t used it since. So I found it bland this time around. More garlic perhaps or some other spice. But this is how they liked it back then. *grin* I am going to give it a day in the refer to see if the flavors just needed to mature. I can’t remember the details of how far ahead we made this one…all those years ago! LOL!

  • 1 Cup Ground Pecans (kids can beat nuts in plastic bag with rolling pin)
  • 2 Cups Frozen Broccoli tips, thawed, diced. ( kids can run the microwave to thaw)
  • 3 Hard Boiled Eggs, diced fine. ( kids can lower eggs into water with ladle)
  • 1 large yellow onion, coarse chopped. ( kids can leave room while you cut! LOL!)
  • 8 ounces of Mushrooms.
  • 2 Tablespoons of Garlic ( 3 cloves) diced.
  • 1 Tablespoon Olive Oil.
  • Lemon.
  • Salt/Pepper.
  • Dash of Worcestershire Sauce
  • 4 Tablespoons Mayonnaise. See this post for Homemade Mayo

When teaching small children to cook, chop onions before inviting them to the kitchen.

1. Bring salted water to a rapid, rolling boil. Add room temperature eggs. Cover. Stop heat. Time for 13 minutes for hard boiled.  Drain and cool. Peel off the shells, rinse. Dice.

2. While the water is boiling get out the food processor or your handy dandy knife. Dice Broccoli, Onions, Garlic. Dump into a large bowl. Kids can learn to cut or if they are too young for knives run the food processor. Squeeze lemon juice onto all this chopped stuff.

3. Start a skillet on the stovetop with the olive oil. Saute’ onion till translucent, then add Mushrooms. Salt and Pepper.  Kids can dump in Mushrooms.

4. Eggs should be ready to cool in the sink about now. Dump the boiling water out, fill will cool water and set in the sink.

5. Finish with the mushrooms and set them aside to cool slightly.

6. Peel Eggs.

7. Dump Mushrooms/Onions into food processor, chop fine.  or chop fine on cutting board. Dump into large bowl with all the rest.

8. Mix all. Add Mayo. Mix again. Add Worcestershire Sauce. Mix again.

9. Press mixture into small bowl.

10. Cover with plate. Hold down with Jar of Rocks! LOL! These rock are ones Jack and the boys have found and gifted me over the years.  They are love rocks. *grin*

Refrigerate. Turn the bowl upside-down on a plate large enough to hold it and crackers to serve buffet style.  To pre-top crackers for fast eating…Press it into a plastic bag, press out air. Refrigerate until needed. Snip corner of bag and squeeze onto crackers pastry bag style. Keeps in the fridge 3-7 days. Do not freeze.

A messy cook? ME! LOL! You bet you buns!!

Perspective on Perfectionism

 

I am breaking a rule. Flylady asks that we not share these emails outside of the Flylady Big Tent Group. I apologize to Kelly who wrote it and Flylady who asked me not to share it. This is gold and you need to see it and I need to save it to read over and over.

 

Dear Friends,
As we are Cruising through the Holidays we need to make
sure that we keep a few things in perspective. Perfectionism. Ahh
there it is that terrible "P" word. How do we keep our perspective
about our own perfectionism. There are so many of us that don’t
believe we can possibly be perfectionists. I mean we are SHEs!! ( sidetracked home executives) We don’t worry about being perfect, we are just trying to survive! Right? WRONG! There is something about the Holiday season that makes us want to jump through hoops that we would never aim for any other time of year.

We scour through magazines looking for new and exciting ways to prepare a turkey. We love watching those DIY (Do It Yourself) television shows on how to make an oh so lovely centerpiece. We aspire to making the cutest and tastiest holiday cookies – ever!! OK, I could go on and on but the reality is this,

a turkey is a turkey and most people really prefer their holiday meals the way they are used to. A lovely centerpiece? Sure we all would love to have a centerpiece for our holiday table that makes our guests just gush in awe and amazement but in reality let’s aim for our dining room tables being set and ready before the turkey is out of the oven.

Holiday cookies – the last time I checked I am always thrilled to just have holiday cookies that are baked by me and not the local bakery because I could not find the time. As for them being the cutest ever, well, I’ll settle for delicious over cute. There is nothing wrong with wanting a great holiday season and all the trimmings that we can handle. Keeping your perspective is the key.

  • If you are going to stay up too late at night, not getting enough
    sleep just so you can re-arrange the dried holly berries and leaves for your centerpiece – you might have lost perspective.
  • If you are spending time and money that you can’t afford on the cutest cookies ever – you might have lost perspective.
  • If you are not letting your children participate in the decorating for the holidays because they don’t do it "right – you might have lost perspective.
  • If you are yelling at your kids because you have lost your patience for the very last time over spilled sprinkles for the cookies – you might have lost perspective.
  • If you have gone behind your family and have re-done the Holiday decorations because they weren’t what YOU wanted them to be – you might have lost perspective.
  • If you have spent a hundred dollars on Holiday magazines that will show you the perfect table setting, recipes, and gifts for this year -you might have lost perspective.
  • If you are rolling your eyes and sighing at your husband because he just won’t help you do anything (because you haven’t actually told him what you need) – you might have lost perspective.

I think by now you might have gotten the point. FLYing will get you
well on you way to having a more peaceful and joyous Holiday season.
Loving yourself enough to get good rest. Loving yourself enough to
know that there are NO perfect holidays. Norman Rockwell had to paint the perfect Holiday scene because in reality, we are real people with real lives that make up real families that are not perfect! FLYing
means keeping your perspective close at heart and perfectionism at
arms length!

Glazed Kiebasa Pictures

 

Well I did end up making this after I said I didn’t have time. Turns out, my husband and children EAT everyday! So I need to cook oh, everyday! LOL!

I took some pictures while I went.

So let’s try this again with pictures this time…

2 lbs kielbasa
12 ounces ginger ale

Directions
1. Cut kielbasa into 2-inch slices. Place in a large skillet with the ginger ale (regular, this does not work with diet ginger ale).

2. Bring to boil, then reduce heat to medium. Do not cover pan.
3. After 15 to 20 minutes, ginger ale will be reduced and start to caramelize.

4. WATCH CAREFULLY because you don’t want it to burn.
5. At this point, keep stirring until chunks are glazed.
6. Serve on a platter with toothpicks inserted. They are sticky and yummy!
Serves 12

I turned this into a meal for my hungry men by adding rice.

Glazed Kielbasa Bites

Hey Y’all!

Sorry I missed you yesterday! I thought about you often through the day, but got caught up to go shopping with Jack. We had some banking to do and usually we eat at our favorite breakfast stop…The Waffle House when we go to the bank! Its SO us, the people there are so friendly and they can’t stop giggling about something. Recently, it was pig tail day and each member of the staff did their hair in pig tails and those who didn’t got messed with until they did!

Anyway, we skipped the Waffle House this time around and went to the plant nursery. I used to pack and unpack an artificial tree every year, but I wanted something I could plant in the yard. So we switched to live rooted trees quite a few years ago. Well, I killed them all. Year after year they just dried up and blew away, no matter what I did to save them. ( its our soil and water — too alkaline, can’t grow azaleas either, boo hoo!) So a few years back we started buying fruit trees and decorating them instead. Then planting them in the yard afterwards. Last year there were no fruit trees to be found so I bought two giant camellias.  This year no camellias no fruit trees. So I bought a holly bush. We will see if it can grow in our yard. Jack suggests we get a small pine for the house and keep it indoors. Controlling the soil and water better I might be able to keep one alive! We searched high and low but this close to Christmas its unlikely to find a live rooted Christmas tree. I think that is a great idea! I will keep looking. Some folks actually bring their live rooted tree BACK to the store for a refund after Christmas, so we might get lucky.

I am SO envious of our neighbors down the hill, they have a side yard full of pine trees and each year a new one appears. I drive by coveting their pine forest! LOL! SO pretty!

Anyway, we made Queso Dip together when we returned and dragged the boys upstairs to watch The Shining. Which scared the poo out of me, but they were largely unaffected ( old movie) Jack Nicholson eyebrows gave them the creeps, but don’t they always! LOL! My mini-Christmas gift to them was to watch a couple of movies that would scare my pants off. I thought The Shining would be a scary one, since I had never seen it. What is it about the full frontal naked chick in every horror movie?…okay I’ve watched only two and there was a completely naked chicks in each one!   Is that a given in every horror flick?

Well, I wanted to make this recipe for you and take pictures because last time was a blast with all that extra attention from the dogs…they love their meaties! But since I lollygagged yesterday I will just post the recipe and you all let me know what you think if you try it, okay? 

Glazed Kielbasa Bites by Elaine Ann at Recipezaar

2 lbs kielbasa
12 ounces ginger ale
Directions

Diana has some cardboard shapes coming out, could be after Christmas. Man! You gotta try these when they post to the store. I had a blast yesterday playing with them. Could be ANOTHER reason why I didn’t blog yesterday like I promised. Yeehaw! I love my job! Its like Kindergarten, play a little, snack, play some more, talk to friends, get presents, play a bit more, make something. Eat Paste. Whoops! I don’t eat paste anymore, but everything else is pretty much the same! HOOT!

Didn’t I promise you a recipe today! Ahhhh, yes! Yes I did! This is a heart attack waiting to happen, but they grew on my family so I am sharing the recipe, take a walk after eating!!

Smokie Cheese Cherries!

  • 1 package of Lil’Smokies
  • 1 Jar of Maraschino Cherries
  • 1/3 block of Sharp Cheddar Cheese
  • Toothpicks

Re-heat the smokies ( they are precooked) in a skillet with nothing but the juice in the package, takes about 3 minutes. While the smokies heat, drain the Cherries, and chop the cheese into little squares. I make REALLY little squares. Cheddar is a strong. I have seen BIG chunks. So do what feels good! LOL!

Assemble like so …while singing the song I wrote…

Christmas Cookin’

 

Gearing up today for Christmas Eating with my pre-shopping, shopping expedition! Weeee! I go 2 weeks out to get the stuff in need and 1 week out for the stuff I forgot! LOL!

After making a giant meal for Thanksgiving and watching all the appetizers go first and never make it to leftovers…. Some never made it to the table…  I started thinking and watching what leftovers we didn’t eat. We have no trouble polishing off HAM!~ LOL! None of the side dishes got fully eaten before they went bad. Noticing what got scarfed up first. We are going to keep it simple for Christmas.

Welcome to the Cates Finger Food Christmas!!

I will still bake a Ham, Mash Potatoes and Gravy, but the rest will be finger foods. Its going to be so much fun building these little yummies with my emerging Man-cooks! Its all simply prep and very little to cook on the day and then we are going to have another video game festival, this time without me stuck in the kitchen so long, prepping and cleaning up, calling out, “…be right there, I have to watch the casseroles 5 more minutes!”

Then we all gather around for a big meal, we really don’t want since we snacked all day, then there is clean up…

…For the birds! I want to be playing, man!

So far the idea is going over well. Its how we eat anyway, small meals, lots of snacks. I am reminded of the movie MERMAIDS where the mom only made finger foods and how that was frowned upon. HOOT! I think she was on to something!

So far this is the list…

  • Deviled Eggs
  • Smokie Cheese Cherries
  • Glazed Kielbasa Bites
  • Vegetarian Pate’
  • Pimento Cheese Crackers
  • Sweet Sour Meatballs

Jodiann’s Deviled Eggs

Homemade Mayo:

  • 2 egg yolks, room temperature
  • garlic powder
  • 1/2 cup olive oil
  • salt and pepper
  • 2 tablespoons red wine vinegar
  • 13 eggs ( one for the cook! LOL!)
  • 1 shallot or onion, minced
  • celery salt
  • yellow curry
  • Directions
    1. mayo, beat the egg yolks with a pinch of garlic powder in a medium bowl with an electric mixer or hand blender. Or use food processor. Slowly blend in the oil, one tablespoon at a time while mixing constantly. Continue to add oil until the consistency is a little thicker than regular mayonnaise. Season with salt and pepper. Mix in the wine vinegar 1 teaspoon at a time. Go slow, this will thin the mayonnaise a bit. I often don’t use all  the vinegar.
    2. Bring salted water to a rapid, rolling boil. Add room temperature eggs. Cover. Stop heat. Time for 13 minutes for hard boiled.  Drain and cool. Peel off the shells, rinse. Cut eggs in half lengthwise. Remove the yolks, and place them into a medium bowl. Place the egg whites on a serving plate. If an egg rips I eat it! Hoot!
    3. To the yolks, add shallot/onion, less than a 1/2 cup of the mayonnaise, a pinch of celery salt, a pinch of curry. Mix until well blended. Mixture should be as stiff as frosting. If the mixture seems dry, stir in more mayonnaise, but be careful a little goes a long way. Spoon into large plastic bag, use like a pastry bag, snip off the tip and squirt the mix into egg white halves. Lightly sprinkle with curry. Chill or serve.

    I  have a double motive for telling you about Jazzy today, one is because I love her stuff and I seldom talk about it. I want to change that… AND because she talked me up on her blog yesterday and I just can’t let that go un-giggled about! LOL!

    She is getting ready to use some of my new stuff coming out in a wordart pack and I am just tickled to death! I can’t wait for you to see it, but I have to finish something first! LOL! All I can say, is who knew it was so hard to get a square right??? LOL!  These best be the finest squares between here and the surface of the SUN for  how long its taking me to get my act together! HOOT! 

    I can say, Jazzy will be using hearts not squares, but daggnabbit if those squares aren’t holding up the show! ALL will be revealed soon! * mysterious voice*

    No backlash from the family about “The-day-the-dryer-blew-up-story” from last week. I guess they were all cleaning their pistols that day! HOOT! Come to think of it, none of my brothers and sisters hunt or even own a gun. Maybe the dryer taught a more powerful lesson than I imagined. Hmmm?? I have 4 or 5 weapons because of Jack mostly, but also because I live in Texas. At the border they stop you for three important things,

    1. To disengage your car signal lights.

    2. Glue the gas pedal to the floorboard.

    3. Make sure you have one firearm per family member.

    HOOT!!

    Oh, before I go one more wordart from Jazzy! This one is not out just yet, but sometime this week. Its based on Kim’s A Fresh Start Kit and its a great companion to it for New Year’s!!

    A Fresh Start, Louie P. & Umami

     

    Kim has a new kit out, of course she does, because she is a machine, a scrap-borg and a heck of a talented one too! I think A Fresh Start is the best kit she has done so far. It can go SO many ways.  She says its a New Year’s Eve kit, but you should see what her CT girls have done with it. Really! Amazing!

    Nate wanted something Japanese, he is an anime freak and now that Japanese words are floating around the house from the boys learning it in school we are getting some kickback culture too, we talk about Japanese food. Alton Brown, does a great show on Miso Soup  ( Turning Japanese 1 ) ( Turning Japanese 2)  Umami! Anyway, I digress! LOL!
